Soju Fried Chicken

This is the most requested of our recipes ... crispy fried chicken thighs dipped in a batter using soju. Glazed in a sticky honey paprika sauce, it's spicy, savory, and hits every brunch craving.
(serve with French Toast, Waffles, Bread (w/ vinegar slaw), Rice, just about anything, or on it's own!)
Recipe:
6 boneless chicken thighs
3/4 cup all-purpose flour (plus extra for dusting)
1 large egg
1/4 cup soju
Salt and pepper to taste
Method:
Soak the chicken thighs in 1/4 cup cooking sake for 5 minutes. Pat dry with paper towels.
Lightly season with salt and pepper, then dust with a little flour.
In a bowl, whisk together flour, egg, soju, paprika, salt, and pepper to form a smooth, flavorful batter.
Dip each chicken thigh into the batter until fully coated.
Fry in hot oil (around 350°F) until golden brown and crispy, about 5–6 minutes per side depending on thickness.
Drain on a wire rack.
Pour 2 oz Soju. Enjoy
Finally, brush with Honey Paprika Glaze
Honey Paprika Glaze Recipe
2 tbsp honey
1 tbsp paprika
1 clove garlic, minced
1/2 tsp chili flakes
Pinch of salt
Combine all ingredients in a small saucepan. Heat gently over low until fragrant and slightly thickened.
Korean Spicy Fried Chicken Sauce
2 tbsp soy sauce
1 tbsp gochujang
1 tbsp mirin
1 tbsp honey
1 tsp rice vinegar
1 clove garlic, minced
1 tsp sesame oil
Simmer all ingredients in a small saucepan over low heat for 3–5 minutes until slightly thickened.
Finish with Miso Butter for a savory kick.
1/2 cup butter
1 tbsp white miso
1 tsp lemon juice
Mix until smooth.
